Veteran's Day Breakfast

On Veteran’s Day, we should all be thankful to those who have served, fought, and, in some cases, died to protect our rights and freedoms here and through out the world.  Some are able to celebrate this day at home with our families and some don’t have quite that much freedom.  I happen to be one of the lucky few!

I decided that I would celebrate by doing something we never seem to do anymore; Sit down, together, as a family and eat a big breakfast.  I planned it out the night before and told the family that the kitchen would close at 9:00am.  This is important, as you will see in a few moments.  I made sure we had all of the ingredients need before going to bed.

The next morning, Veteran’s Day, I over slept.  I didn’t start cooking until 8:30.  I started by getting all the necessary dishes and ingredients out so that I could access them all easily (Its been a while since I have done this).  I pre-heated the oven and went to work.  The menu included biscuits (no, they weren’t home-made, they came from a can), sausage, bacon, fried eggs (made to order) and chocolate gravy (yes, I said chocolate).

It was about 8:45 when the rest of the family started to rouse due to the noise and smell of breakfast cooking.  As Dave approached the kitchen, I could tell that he was near tears when he realized that he was going to miss breakfast because the kitchen was going to be closing at 9:00.  I quickly told him that we would be serving brunch until 11:00.  All is not lost!!

I continued to prepare the meal and was soon joined by two interested boys who seemed to enjoy watching bacon shrink.  They wanted to help so I set them to getting out jelly and butter for the biscuits,  and setting the table with plates and silverware.

After getting the sausage and bacon out of the skillet, I took orders for the eggs.  I had two who wanted the yolks unbroken but solid, Shelby said for me to surprise her, and Laura and I had my favorite, over easy.

We all sat down at the table at the same time and had Veteran’s day breakfast together.  It was a great way to start this holiday that celebrates the individuals who have fought to give us our freedoms.

Be sure to thank a veteran today and every day!!  A special thanks to my father!!

Oh, and we had left-overs.  I guess I may have over done it a little.
